soba stir fry

List of Ingredients

3 oz soba noodles
6 oz Pork, tenderloin, lean only, raw
4 oz tempeh
1/2 cup Peppers, sweet, red, raw
1 cup Onions, raw
1 cup Cabbage, chinese (pak-choi), raw
1/2 cup Carrots, raw
1 cup Beans, snap, green, raw
1 tbs Oil, olive, salad or cooking
2 tbs Soy sauce made from soy (tamari)
1/2 cup Cabbage, savoy, raw
1/4 cup Water
1/2 tsp Oil, sesame, salad or cooking
1/8 tsp Spices, pepper, black
1/8 tsp ginger, ground
1/2 tsp Garlic, raw
1/4 fruit (2" dia) Limes, raw
1 cup Chard, swiss, raw
1/2 oz Seeds, sesame seeds, whole, roasted and toasted

Instructions for Preparation

heat 2 qts water to a boil- cook soba 5-6 minutes until done- drain and set aside. make marinade: add soy sauce, ground ginger, minced garlic (1 clove) & black pepper with juice of 1/4 lime or lemon (1/2 rsp) adding 2 tbs water- stir well to blend. slice tempeh & pork loin into small (bite sized) pieces, quick marinate in prepared sauce to cover- reserving half for later use. prepare vegetables by peeling, cutting/chopping into bite sized pieces. reserve leafy greens. pre-cook (steam) carrots and green beans in water, reserving liquid. splash of olive oil in large saute pan (or wok)- quick brown tempeh, remove from heat, set aside, quick cook pork, remove from heat and set aside. Add onions to empty pan- stirring while heating, next add bell peppers. Add remaining vegetables to pan stirring well and cooking quickly to retain color and texture, adding steamed veggie water if needed. Add pork and tempeh back into pan when all veggies are cooked to taste- adding remainder of marinade- combining well- add leafy greens last (only need to wilt) then add soba noodles, mixing well. Stir in sesame oil last. serve hot. garnish with toatsed sesame seeds (optional). always optional- adding more or less veggies, varying to suit preference or to use leftovers or whatever you have on hand. Canned water chesnuts, bamboo shoots or baby corns, add mushrooms, etc.
